our organic Japanese matcha powder with catechins

What is matcha tea ?

Matcha is a tea rich in antioxidants (catechins), vitamins and L-theanine. It is often used as a superfood as a detoxifier to protect the body while contributing to daily well-being. It also provides emotional well-being thanks to its relaxing properties and stimulates the brain by improving cognitive functions (concentration, memory, reactivity). It also has many culinary and nutritional benefits.

Before harvesting, the tea bushes are protected from the sun to increase their chlorophyll content, so that the matcha tea will have a beautiful bright green colour, and will be rich in amino acids which will soften its taste. The leaves are then dried, sorted and crushed to obtain a very fine powder.

Its beautiful green colour is ideal for preparations such as ice creams, milkshakes, pastries… and its many other benefits allow it to be used to improve the body.

We offer matcha tea powder (Camelia sinensis) of Japanese origin,
from organic agriculture and titrated in catechins.

the Japanese origin of our matcha tea

Matcha tea originated in Japan where it was consumed in Buddhist monasteries as early as the 12th century. It inspired the age-old art of sado through the tea ceremony.

This thought developed by sen no Rikyu, a Japanese tea master from the 16th century, is based on 4 values: harmony, respect, purity and tranquility.

Matcha is the only tea used for this traditional ceremony even though there are dozens of different ways to prepare it.

Today, matcha is one of the most popular teas consumed by the Japanese.

Did you know ?

Tea culture originated in China in the 12th century. It was in Japan, then, that tea cultivation and the matcha tea ceremony were developed.

During this period, the techniques of harvesting, cultivation and processing of matcha were enriched in Japan to obtain a high quality matcha. Japanese matcha is therefore the most original, not only in terms of quality but also historically.

a special selection under quality control

a careful selection

Matcha tea is selected for its flavour, aroma and colour.
Hundreds of tea growers in Japan are visited each year to ensure knowledge of the teas, and to improve the quality of the tea leaves if necessary.
During the peak season, hundreds of leaves are assessed to select those that will produce the best flavours, colours and aromas.

bringing out the best in each type of tea

The essential steps in ensuring the best of the teas are sorting, shaping and removing poor quality leaves.
The heating process is also an essential element in bringing out the best of the sweetness, flavour and aroma of the leaves. Even a small change of 1°C can make a big difference, so it is important to check the leaves at several stages and make temperature adjustements.

the art of synergistics blends

Tea mastes’ are the people responsible for creating tea blends. These professionals bring out the best potential of the teas to create character and a unique flavour.
Blending is about bringing out the best in each tea leaf and maximising the synergy of the teas in a blend.

quality control to maintain high quality teas in the best conditions

The selected and processed leaves are strictly stored at a temperature of -20°C. Leaves harvested in the middle of the season retain their best quality at this temperature.
Each type of tea leaf produced by the different growers is stored separately until it is thawed before finishing. Leaves that now have a lower moisture content after heating are chilled to 0°C until dispatch.
